Hey Longmont kickboxers! With the season change it’s getting cold outside! There is nothing better than a warm meal waiting for you at the end of a long day. My FAVORITE fall meal has been homemade soups!

With the right soup recipe you don’t need added sides, breads or fillers. Cutting out the extra food keeps those unwanted winter pounds away too. I wanted to share a soup recipe that’s been in my family for close to 40 years. It’s chunky enough to leave you feeling satisfied, and absolutely delicious.

MINESTRONE SOUP

INGREDIENTS –
1 lb. lean ground beef or lean ground turkey
1 ½ quarts low sodium beef stock
1 can green beans
2 cups cubed potatoes
1 (8 oz) can tomato sauce
1 cup pasta for soup
2 T minced onion
1 ½ tsp. Salt
2 tsp. Worcestershire sauce
½ tsp. Oregano
½ tsp. Basil
1 tsp. Minced garlic
Dash of black pepper

DIRECTIONS –

Brown ground beef in a large pot. Add water, undrained beans and remaining ingredients (except pasta). Simmer for 60 minutes or until potatoes are tender. Add pasta and continue simmering until pasta is tender as well.
